This Easy One-Pot Teriyaki Noodles recipe is a quick and flavorful meal combining tender spaghetti noodles with a savory homemade teriyaki sauce, sautéed green cabbage, and shredded carrots. It’s perfect for a busy weeknight dinner, requiring just one pot to create a deliciously comforting dish garnished with nutty sesame seeds.

Ingredients

Vegetables

  • ½ green cabbage, shredded
  • 2 carrots, shredded

Teriyaki Sauce

  • ⅔ cup soy sauce
  • ½ cup brown sugar
  • ½ teaspoon ground mustard
  • 1 teaspoon ground ginger
  • ½ teaspoon garlic powder

Main Ingredients

  • 1 teaspoon olive oil
  • 16oz spaghetti (1 pound box)
  • 3 ½ cups water
  • 1 tablespoon sesame seeds

Instructions

  1. Prepare and sauté vegetables: Heat a large pot over medium-high heat. Once hot, add the olive oil followed by the shredded green cabbage and shredded carrots. Sauté for about 5 minutes until the vegetables begin to soften and become tender.
  2. Add sauce ingredients and pasta: Stir in the soy sauce, brown sugar, ground mustard, ground ginger, and garlic powder to the pot, mixing well to evenly coat the vegetables. Add the spaghetti noodles into the pot; you may break the spaghetti in half if desired for easier cooking. Pour in 3 ½ cups of water.
  3. Cook noodles: Cook uncovered for 15-18 minutes. When the spaghetti starts to become flexible and malleable, begin stirring the pot every few minutes, increasing frequency toward the end of cooking to prevent sticking and ensure even cooking.
  4. Finish and serve: Once the noodles are cooked through and tender, remove the pot from the heat. Toss in the sesame seeds and stir to combine. Serve immediately, optionally garnishing with additional sesame seeds or green onions for extra flavor and texture.

Notes

  • Breaking the spaghetti in half is optional but helps with even cooking and easier handling in the pot.
  • Continuous stirring towards the end of cooking prevents the noodles from sticking to the bottom of the pot.
  • For additional garnish, green onions or chopped scallions complement this dish well.
  • You can adjust the sweetness or saltiness by varying the amount of brown sugar or soy sauce according to taste.
  • This dish can be made gluten-free by substituting soy sauce with tamari and using gluten-free noodles.
