This easy guacamole recipe brings together ripe avocados, fresh herbs, and a hint of lime for a creamy, flavorful dip perfect for any occasion. Ingredients

Guacamole

  • 1 tbsp red onion, finely chopped
  • 1 bunch coriander, chopped
  • 1 tbsp jalapeno chilis, chopped (optional)
  • 1/2 tsp salt
  • 2 large ripe avocados
  • 1 lime, juiced

Instructions

  1. Prepare the paste: Add the finely chopped onion, coriander, jalapeno chilis (if using), and salt to the bowl of a mortar and pestle. Grind the ingredients together until they form a coarse paste. Alternatively, you can finely chop and mash these ingredients using a knife on a chopping board.
  2. Mash the avocados: Remove the seed and skin from the avocados, then place the flesh into a mixing bowl. Mash the avocados roughly for a chunkier texture or finely for a smoother dip, depending on your preference.
  3. Combine and mix: Add the prepared paste and fresh lime juice to the mashed avocados. Mix thoroughly until all ingredients are well combined and the guacamole reaches your desired consistency.
  4. Store properly: To store, transfer the guacamole to a bowl and smooth down the top. Pour a thin layer of olive oil over the surface to prevent browning. Cover and refrigerate for up to 3 days. When ready to serve, remove from the fridge, discard the olive oil layer, add fresh lime juice, and mix before serving.
  5. Adjust spiciness: For less heat, omit the jalapenos. For extra heat, increase the amount of jalapeno chilis according to taste.

Notes

  • Seasoning a mortar and pestle before use helps prevent it from absorbing odors and makes cleaning easier. Simply crush about 1 tsp of coarse salt inside the bowl to season.
  • Use ripe avocados for the best texture and flavor. Under-ripe avocados won’t mash properly. This recipe uses 2 large or about 3 medium avocados.
  • To keep guacamole fresh and green, cover with olive oil when storing and add fresh lime juice before serving after refrigeration.
