Ingredients

Cake

  • 1 (15.25 oz) box white cake mix
  • 1/4 cup rainbow candy sprinkles, plus extra for decorating
  • 2 1/2 cups milk

Pudding Filling

  • 2 (3.4 oz) boxes instant vanilla pudding mix
  • 2 1/2 cups milk (divided as 1 1/2 cups and 1 cup)

Topping

  • 4 cups frozen whipped topping, thawed

Instructions

  1. Preheat Oven: Preheat your oven according to the cake mix package directions to prepare for baking the cake.
  2. Prepare Cake Batter: Mix the white cake mix according to package directions and stir in 1/4 cup of candy sprinkles to create the funfetti effect.
  3. Bake Cake: Pour the batter into a prepared 9×13-inch cake pan and bake as directed by the cake mix instructions. Once done, allow the cake to cool completely.
  4. Make Holes: Use the end of a wooden spoon, wide chopstick, or similar tool to poke holes about half an inch wide evenly over the top of the cooled cake.
  5. Prepare First Pudding: In a medium bowl, mix one box of instant vanilla pudding with 1 1/2 cups milk just until it begins to thicken but is still runny.
  6. Fill Holes with Pudding: Using a small tipped piping bag or small spoon, fill the holes in the cake with the first pudding mixture. Spread any leftover pudding over the cake’s surface.
  7. Prepare Second Pudding Mixture: Mix the second box of pudding with 1 cup milk until beginning to thicken. Then fold in the thawed frozen whipped topping gently.
  8. Top Cake: Spread this creamy whipped topping and pudding mixture evenly over the entire cake. Optionally, reserve some topping to pipe decorative swirls on top.
  9. Decorate and Chill: Sprinkle additional candy sprinkles over the top. Refrigerate the cake for at least 30 minutes to allow the pudding to set properly.
  10. Serve: Slice and serve the delicious funfetti poke cake as desired.

Notes

  • You can bake this cake from scratch using your favorite 9×13-inch white cake recipe instead of a box mix.
  • Feel free to customize by using different pudding flavors to tailor the cake to your taste.
  • Using a piping bag to fill pudding into the holes ensures even filling and results in a moister cake.
  • Store leftover cake in the refrigerator for up to 5 days or freeze it for up to 3 months for longer storage.
