These refreshing Cucumber Bites are a delightful appetizer featuring crisp cucumber slices topped with a creamy, tangy whipped feta spread blended with lemon, honey, and fresh dill. Light, flavorful, and perfect for entertaining or a healthy snack.

Ingredients

Whipped Feta Spread

  • 1 (8-ounce) block feta cheese, crumbled
  • ½ lemon, juice and zest
  • 1 tablespoon honey
  • 1-2 sprigs fresh dill, plus more for garnish
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup olive oil

Cucumber Base

  • 2 large hot house cucumbers, cut into ½ inch slices

Instructions

  1. Prepare the Whipped Feta: In the bowl of a food processor, combine the crumbled feta cheese, lemon juice and lemon zest, honey, and fresh dill sprigs. Pulse 4-5 times to start blending the ingredients.
  2. Incorporate Olive Oil: With the food processor running continuously, slowly stream in the olive oil. Continue mixing until the mixture becomes completely smooth and creamy, forming a light whipped feta spread.
  3. Assemble the Cucumber Bites: Arrange the cucumber slices on a serving platter. Using a spoon or small spatula, place a generous dollop of the whipped feta spread on each cucumber slice.
  4. Garnish and Serve: Top each cucumber bite with a small sprig of fresh dill for garnish. Serve immediately for best freshness.

Notes

  • Storage: Store leftover cucumber canapes in an airtight container in the refrigerator for up to 2 days. To prevent sogginess, store the whipped feta spread separately from the cucumber slices.
  • Taste and Adjust: Some brands of feta can be saltier than others. Taste the whipped feta after blending and add extra lemon juice if it tastes too salty to balance the flavors.
  • Alternate Serving: Serve the whipped feta as a dip in a bowl surrounded by cucumber slices for guests to serve themselves easily.
