Ingredients

Chicken and Sauce

  • ½ cup unsalted butter, sliced into pats
  • 4 boneless, skinless chicken breasts (or 2 thick breasts sliced in half lengthwise)
  • 1 packet Italian dressing mix
  • ¼ cup lemon juice
  • ½ cup chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons capers, drained
  • Salt & pepper to taste

Pasta

  • 1 pound pasta (your choice of type)

Instructions

  1. Prepare the crock pot: Slice the butter into 8 pats and arrange them evenly on the bottom of the crock pot.
  2. Add the chicken: Place each chicken breast on top of two pats of butter in the crock pot.
  3. Season the chicken: Sprinkle the Italian dressing mix evenly over the chicken breasts.
  4. Add liquids and garlic: Pour the lemon juice and chicken broth over the chicken, then add the minced garlic to the crock pot.
  5. Cook the chicken: Cover and cook on HIGH for 4-5 hours or on LOW for 6-8 hours until the chicken is tender and cooked through.
  6. Cook the pasta: About 15 minutes before the chicken is finished, cook the pasta according to package instructions until al dente. Drain and set aside.
  7. Add capers: When the chicken is fully cooked, stir in the drained capers to combine with the sauce.
