Ready in minutes, it’s an ideal quick meal for those craving comfort food without the extra calories and fat from traditional frying methods.

Ingredients

Chicken and Coating

  • 2 (6 oz) chicken breasts, cut into cutlets (or store-bought cutlets)
  • 2 cups seasoned panko breadcrumbs
  • ½ cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon granulated garlic
  • 1 teaspoon chili powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 23 large eggs
  • Olive oil cooking spray (non-aerosol)

Topping and Serving

  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • Parmesan cheese, for sprinkling
  • Chopped basil and parsley for garnish

Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 390°F to ensure it is hot and ready for cooking the chicken cutlets evenly and quickly.
  2. Prepare the Coating Station: In a shallow bowl, mix together panko breadcrumbs, grated parmesan, Italian seasoning, granulated garlic, chili powder, kosher salt, and black pepper. In another shallow bowl, whisk the eggs and season with a pinch of salt and pepper.
  3. Coat the Chicken: Pat the chicken cutlets dry with a paper towel. Dip each piece first into the egg wash, shaking off the excess, then dredge thoroughly in the breadcrumb mixture, pressing to adhere. Place the coated cutlets on a clean plate.
  4. Air Fry the Chicken: Lightly spray the air fryer basket with olive oil spray. Arrange the chicken cutlets in a single layer without overlapping. Spray the tops of the cutlets with olive oil spray. Cook for 5 minutes at 390°F.
  5. Flip and Continue Cooking: Flip each chicken cutlet over, spray again with olive oil, and cook for an additional 5 minutes until golden crisp and cooked through. The internal temperature should reach 165°F.
  6. Add Sauce and Cheese: Open the air fryer and spoon tomato sauce evenly over each piece. Sprinkle shredded mozzarella and a bit of parmesan on top. Return to the air fryer and cook for 2 more minutes to melt the cheese perfectly.
  7. Rest and Serve: Remove the chicken parmesan from the air fryer and let it rest for 5 minutes to allow flavors to settle. Garnish with chopped basil and parsley. Serve with a spinach salad or your preferred pasta for a complete meal.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat leftover chicken parmesan in the air fryer at 350°F until warmed through to maintain crispiness.
  • Use evenly sized chicken cutlets for uniform cooking times.
  • Cooking times vary slightly by weight: 4-ounce breasts take about 9-10 minutes, 5-ounce breasts 10-12 minutes, and 6-ounce breasts 11-13 minutes. Always ensure chicken reaches 165°F internally.
