It’s an easy yet elegant stovetop dish perfect for a comforting dinner served with pasta or low-carb sides like roasted cauliflower.

Ingredients

Chicken

  • 1 pound chicken breast (2 large breasts)

Sauce

  • 3 tablespoons butter
  • 4 large garlic cloves, minced
  • 1/2 yellow onion, finely minced
  • 3-4 ounces roasted red peppers, thinly sliced
  • 1/4 teaspoon paprika
  • 1 1/2 cups heavy cream
  • 1 cup packed fresh basil leaves, plus more for garnish
  • 1 cup fresh grated parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup white wine or chicken stock
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare Chicken: Cut the chicken breasts in half lengthwise and pound each piece to even thickness using a rolling pin inside a sealed zip-top bag for uniform cooking.
  2. Sear Chicken: Heat 2 tablespoons of butter in a large non-stick pan over medium to medium-high heat. Season chicken generously with salt and pepper. Sear the chicken for 4-5 minutes on each side until just cooked through, then remove from the pan and set aside.
  3. Sauté Aromatics: In the same skillet, add the remaining 1 tablespoon butter. Add finely minced onion, minced garlic, sliced roasted red peppers, paprika, crushed red pepper flakes, salt, and black pepper. Sauté for about 5 minutes until the onions and peppers are softened and fragrant.
  4. Deglaze Pan: Pour in the white wine or chicken stock to deglaze the skillet. Let it simmer gently until reduced by half, scraping up any browned bits for enhanced flavor.
  5. Make Cream Sauce: Lower the heat to medium-low and add heavy cream. Stir continuously until the sauce becomes creamy. Adjust seasoning with salt and pepper as needed. Gradually stir in the grated parmesan cheese until melted and incorporated into the sauce.
  6. Add Basil and Simmer: Stir in the fresh basil leaves and allow them to wilt in the sauce for 1-2 minutes, infusing the sauce with fresh herb flavor.
  7. Finish Dish: Return the cooked chicken breasts to the skillet and warm through in the sauce for a couple of minutes. Serve immediately, garnished with additional fresh basil if desired.

Notes

  • To pound chicken breasts evenly, slice them in half lengthwise like a book, place inside a sealed zip-top bag, and gently pound with a rolling pin.
  • This dish pairs wonderfully with pasta, but for a low-carb option, serve alongside roasted cauliflower.
