Ingredients

Crust

  • 1 ½ cups Graham Crackers
  • ½ cup Butter, melted

Filling

  • 8 ounces Philadelphia Cream Cheese, softened
  • ½ cup Whipped Cream
  • 1 cup Powdered Sugar
  • 1 tablespoon Lavender Syrup
  • 5 Drops Purple Food Colouring

Garnish

  • 1 Sprig Dry Lavender

Instructions

  1. Prepare the crust: Add graham crackers to a food processor and pulse until fine crumbs form or crush them in a large zip lock bag using a rolling pin. Place the crumbs in a medium bowl, pour in melted butter, and mix thoroughly. Press the crumb mixture evenly into the bottom of an 8-inch springform pan. Refrigerate for about 30 minutes to set the crust.
  2. Make the filling: In a large bowl, beat the softened cream cheese, whipped cream, and powdered sugar together using a stand mixer on medium speed until smooth and creamy. Add the lavender syrup and a few drops of purple food coloring, then continue beating for an additional 2 minutes to fully incorporate the flavors and color.
  3. Assemble and chill: Pour the lavender cream cheese mixture into the prepared crust. Place the springform pan in the refrigerator for at least 2 to 3 hours to allow the cheesecake to set properly.
