Ingredients

Wet Ingredients

  • 2 large eggs
  • 3 tablespoons avocado oil (or melted cooled coconut oil, or light olive oil)
  • ¼ cup pure maple syrup or honey
  • ¼ cup orange juice
  • 1 ¼ cups milk
  • ½ teaspoon vanilla extract or almond extract

Dry Ingredients

  • 2 ¼ cups gluten free rolled oats
  • 1 tablespoon orange zest (zest of 1 medium orange)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon fine sea salt
  • 1 cup fresh or frozen cranberries

Glaze

  • ½ cup confectioners sugar
  • 2 teaspoons orange juice

Instructions

  1. Preheat and Prepare: Preheat your oven to 375ºF and grease a 9×9-inch baking dish or one of similar size to prevent the oatmeal from sticking during baking.
  2. Whisk Wet Ingredients: In a large bowl, whisk together the eggs, avocado oil, maple syrup (or honey), orange juice, milk, and vanilla or almond extract until fully combined and smooth.
  3. Add Dry Ingredients: To the wet mixture, add the gluten-free rolled oats, orange zest, baking powder, ground cinnamon, and fine sea salt. Gently fold in the fresh or frozen cranberries, ensuring even distribution throughout the batter.
  4. Bake the Oatmeal: Transfer the batter into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 35 to 40 minutes, or until the edges turn golden and the center is set firm to the touch. You can serve it immediately in bowls or allow it to cool about 20 minutes before slicing into squares for serving.
  5. Prepare the Glaze: In a small bowl, mix the confectioners sugar with 2 teaspoons of orange juice until you reach a smooth, drizzling consistency. Adjust with more juice or sugar if needed.
  6. Serve: Drizzle the orange glaze over the baked oatmeal and serve with your favorite toppings like additional maple syrup, nuts, or fresh fruit for a wholesome breakfast or snack.
