Ingredients

Sweet Potato

  • 2 medium/large sweet potatoes, cubed
  • 2 teaspoons olive or avocado oil

  • ⅛ teaspoon black pepper

Ground Beef Mixture

  • 1 pound lean ground beef (90/10 preferred)
  • 2-3 tablespoons taco seasoning, adjust to taste
  • 2 tablespoons water, if needed

Toppings

  • 1 cup cottage cheese (good culture preferred)
  • 1 avocado, chopped
  • 4 teaspoons hot honey
  • Hot sauce, to taste
  • Pickled onions and/or hot and sweet jalapeños, for garnish

Instructions

  1. Preheat Oven and Roast Sweet Potatoes: Preheat your oven to 400°F. Toss the cubed sweet potatoes with olive or avocado oil, sea salt, black pepper, and garlic powder until evenly coated. Spread them evenly on a baking sheet and roast for 20 minutes, flipping halfway through to ensure even cooking. Alternatively, you can use an air fryer to cook the sweet potatoes if preferred.
  2. Cook Ground Beef: While the sweet potatoes roast, heat a skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula, and cook until browned and fully cooked, about 6-7 minutes. Stir in the taco seasoning and add water if needed to maintain moisture. Cook for an additional minute to combine flavors well.
  3. Assemble the Bowls: Divide the roasted sweet potatoes into four bowls. Top each bowl with the cooked ground beef. Spoon cottage cheese over the beef evenly. Add chopped avocado and drizzle each bowl with hot honey and your favorite hot sauce. Garnish with pickled onions and/or jalapeños if using. Serve immediately and enjoy!
