Ingredients

To Marinate Fish

  • 1 lb skinless cod fillet
  • 2 tbsp oil

To Make Sauce

  • 1/4 cup Greek yogurt

To Make Slaw

  • 1 cup purple cabbage, shredded
  • 3/4 cup carrots, shredded
  • 1/3 cup frozen corn, thawed
  • 2 tbsp jalapenos, chopped
  • 1/4 cup cilantro, chopped
  • 3 tbsp Greek yogurt
  • 1 tsp lemon juice
  • Salt to taste

To Serve

  • 6-8 corn tortillas

Instructions

  1. Marinate the Fish: In a bowl, combine the oil, lemon juice, paprika, cayenne pepper, ground cumin, and salt. Add the cod fillets and coat them thoroughly with the marinade. Cover and let them marinate for at least 30 minutes to absorb the flavors.
  2. Prepare the Sauce: While the fish marinates, mix together the Greek yogurt, mayonnaise, lemon juice, paprika, and salt in a small bowl until smooth and creamy. Set the sauce aside.
  3. Make the Slaw: In a separate bowl, combine the shredded purple cabbage, shredded carrots, thawed corn, chopped jalapenos, chopped cilantro, Greek yogurt, lemon juice, and salt. Toss everything together evenly and set aside.
  4. Cook the Fish: Heat a skillet over medium-high heat. Place the marinated cod fillets in the skillet and sear them for 3-5 minutes on each side until fully cooked and opaque. Remove the fish from the skillet and gently break into bite-sized chunks.
  5. Char the Tortillas: Using an open flame (such as a gas stovetop burner) or a dry skillet, quickly char the corn tortillas until they develop slight blackened spots and become pliable.
  6. Assemble the Tacos: Place each charred tortilla on a serving plate. Add a portion of the flaked cod, followed by a tablespoon of slaw. Drizzle a generous amount of the prepared sauce on top. Garnish with extra chopped jalapenos and cilantro if desired.
