  • 6 medium clementines, peeled, halved, and sliced ¼-inch thick
  • 2-3 medium mini cucumbers, thinly sliced
  • 1 medium ripe avocado, cored, halved, peeled, and sliced ¼-inch thick
  • ¼ medium white onion, thinly sliced vertically
  • ⅓ cup crumbled goat cheese
  • ⅓ cup salted, roasted pistachios, shelled

Honey White Balsamic Dressing

Instructions

  1. Prepare the greens and toppings: Place the 10 cups of cleaned mixed greens into a large bowl or on a large serving platter.
  2. Add fruit and vegetables: Arrange the clementine slices, thinly sliced mini cucumbers, white onion slices, and avocado slices evenly over the greens.
  3. Dress the salad: Drizzle 2 to 3 tablespoons of Honey White Balsamic Dressing lightly over the salad and toss gently to combine all ingredients without bruising the delicate fruit and greens.
  4. Finish with cheese and nuts: Sprinkle the crumbled goat cheese and salted roasted pistachios on top, and add freshly ground black pepper to taste.
