Ingredients

Nut Base

  • 1 ½ cups almonds
  • ½ cup walnuts

Dough Mixture

  • 1 ½ cups pitted Medjool dates
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 tablespoon water (optional)

Cinnamon Layer

  • 3 tablespoons cinnamon

Instructions

  1. Process Nuts: Add the almonds and walnuts to a food processor and pulse until the nuts are roughly the size of peas, creating a chunky texture base for the dough.
  2. Form Dough: Add the pitted Medjool dates, vanilla extract, and salt to the food processor with the nuts. Run on high until the mixture forms a cohesive large ball. If the mixture is dry and not coming together, add 1 tablespoon of water and pulse again until combined.
  3. Create First Layer: Remove half of the nut-date dough from the food processor. Press this portion evenly onto a piece of parchment paper, creating a 1/4 inch thick layer.
  4. Mix Cinnamon Into Remaining Dough: Add the cinnamon to the remaining dough in the food processor and pulse briefly until well combined.
  5. Create Cinnamon Layer: Press the cinnamon-flavored dough evenly over the first nut-date layer on the parchment paper.
  6. Roll and Chill: Starting from one end, tightly roll the layered dough into a log with the seam placed face down. Wrap the roll tightly in plastic wrap and place it in the freezer for at least 1 hour to firm up.
  7. Slice and Serve: Remove the chilled roll from the freezer, slice into ½ inch thick pieces, and enjoy as an energizing snack or sweet treat whenever desired.
