Ingredients

For the Tahini Maple Dressing

  • 4 tbsp tahini (60 g)
  • 3 tbsp fresh lemon juice
  • 3 tbsp water, plus more as needed
  • 2 tbsp maple syrup
  • 1 tsp garlic powder
  • 1/2 tsp sea salt, or to taste

For the Chickpea Salad

  • 8 heaping cups mixed salad greens, arugula or baby spinach (2 cups per salad)
  • 4 cups very finely sliced red cabbage (1 cup per salad)
  • 1 cup dried cranberries or raisins (1/4 cup per salad)
  • 12 tbsp hemp seeds (3 tbsp per salad), substitute walnuts if desired
  • 19 oz can chickpeas, drained and rinsed (1/2 cup per salad)
  • 2 cups fresh blueberries (1/2 cup per salad)

Instructions

  1. Prepare the Tahini Maple Dressing: In a medium bowl, whisk together tahini, fresh lemon juice, water (start with 3 tbsp), maple syrup, garlic powder, and sea salt until smooth. Slowly add more water as needed until the dressing reaches a thick, creamy, but still pourable consistency.
  2. Assemble Individual Salads: For each serving, start by placing 2 cups of mixed salad greens in a bowl as a base.
  3. Add Salad Ingredients: Top the greens evenly with 1 cup of thinly sliced red cabbage, 1/4 cup dried cranberries or raisins, 3 tbsp hemp seeds, 1/2 cup drained and rinsed chickpeas, and 1/2 cup fresh blueberries.
  4. Dress the Salad: Generously drizzle the tahini maple dressing over each assembled salad to enhance flavor and creaminess.
  5. Serve and Enjoy: Serve the salads immediately for the best freshness and enjoy a nutritious, delicious meal.

Notes

  • You can make the salad in a large mixing bowl and then divide into four portions if desired.
  • Walnuts can be used instead of hemp seeds for added crunch.
  • Adjust the amount of sea salt in dressing to taste.
  • This salad is best served fresh but can be stored covered in the fridge for up to 1 day.
