Delicious and comforting Cheesy Ranch Potatoes featuring tender baby red or russet potatoes tossed in creamy ranch dressing and butter, baked to golden perfection, then topped with melted cheese for a flavorful side dish perfect for any meal.

Ingredients

Potatoes

  • 3 lbs baby red potatoes or russets, cut into 1–1½ inch pieces

Seasoning & Dressing

  • ½ cup buttermilk ranch dressing or plain yogurt ranch
  • Garlic salt to taste
  • Freshly ground black pepper to taste

Butter & Cheese

  • 2–3 tbsp unsalted butter, diced
  • 1–1½ cups shredded cheese (Mexican blend, cheddar, or your choice)

Optional Garnish

  • Chopped chives or green onions

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) and grease a 9×13-inch casserole dish thoroughly to prevent sticking.
  2. Parboil Potatoes: Place the diced potatoes in a large pot filled with salted water. Bring to a boil and cook for 8–12 minutes, until the potatoes are tender but still firm to the bite. Drain them well to remove excess water.
  3. Toss with Ranch: While the potatoes are still warm, toss them with the buttermilk ranch dressing or yogurt ranch, diced unsalted butter, garlic salt, and freshly ground black pepper until each piece is evenly coated with the flavorful mixture.
  4. Bake Potatoes: Transfer the coated potatoes into the greased casserole dish, spreading them out evenly. Bake uncovered in the preheated oven for 20–25 minutes until the potatoes turn lightly golden and start to crisp.
  5. Add Cheese: Remove the casserole dish from the oven and sprinkle the shredded cheese evenly over the top of the potatoes. Return the dish to the oven and broil for 2–3 minutes, or until the cheese is melted, bubbly, and slightly browned.
  6. Serve: Garnish the cheesy ranch potatoes with chopped chives or green onions if desired. Serve immediately while warm for the best flavor and texture.

Notes

  • Potato Choice: Baby red potatoes hold their shape well after parboiling and baking, while russet potatoes provide a softer, creamier texture.
  • Cheese Options: Use Mexican blend, sharp cheddar, or Colby cheese based on preference. For a richer dish, add extra cheese.
  • Make Ahead: You can parboil and season the potatoes ahead of time and bake them just before serving for convenience.
  • Seasoning: Adjust the garlic salt and black pepper according to taste. Consider adding smoked paprika or onion powder for an extra layer of flavor.
  • Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain the crispiness of the potatoes.
