Caramel Butter Bars are a rich and buttery dessert featuring a tender shortbread crust topped with a luscious layer of caramel and finished with crumbly buttery topping. Ingredients

Shortbread Dough

  • 1 cup butter, at room temperature
  • ½ cup sugar
  • ¾ cup powdered sugar
  • 1 tablespoon vanilla extract
  • 2 cups flour

Filling

  • ½ cup premium jarred caramel sauce

Instructions

  1. Preheat the oven: Preheat your oven to 325°F (163°C) to prepare for baking the crust and bars.
  2. Mix the shortbread dough: In a large bowl, combine the butter, sugar, and powdered sugar. Using a hand mixer, beat the mixture until creamy. Add the vanilla extract and continue beating until fully incorporated. Slowly add the flour and mix on low speed until a uniform dough forms.
  3. Prepare the crust: Line an 8 x 8-inch pan with non-stick foil or regular foil sprayed with cooking spray. Press one-third of the dough evenly into the pan to form the bottom crust. Place the remaining dough into the refrigerator while the crust bakes.
  4. Bake the crust: Bake the crust in the preheated oven for about 20 minutes or until it is slightly golden around the edges.
  5. Add caramel layer: Remove the crust from the oven. Drizzle the jarred caramel sauce evenly over the warm crust. Let it sit for a few minutes to allow the caramel to set slightly, then spread it carefully using an offset spatula to create a smooth layer.
  6. Top with crumbly dough: Remove the reserved dough from the refrigerator and crumble it over the caramel layer. Use your fingers to pinch together some crumbs to have varied-sized topping pieces.
  7. Bake the bars: Return the pan to the oven and bake for 25 minutes or until the caramel is bubbly and the crumb topping is firm and lightly golden brown.
  8. Cool and serve: Allow the bars to cool completely before cutting into squares. For faster cooling, place the bars in the refrigerator. Serve chilled or at room temperature.

Notes

  • Spray your liquid measuring cup with a non-stick cooking spray like Pam before measuring caramel to easily release it.
