  • 1 1/2 cups butterscotch morsels (divided)

Instructions

  1. Preheat oven: Set your oven to 350°F (175°C). Prepare a 9×13 inch baking pan by spraying it with non-stick spray or applying butter and flour to ensure easy removal.
  2. Cream butter and sugar: In a large bowl, combine the room temperature butter and packed brown sugar. Use a hand-held mixer to beat them until the mixture becomes lighter in color and fluffy in texture.
  3. Add eggs and vanilla: Mix in the eggs and vanilla extract with the creamed butter and sugar, continuing to beat for 1 to 2 minutes until the ingredients are fully combined. Scrape the sides of the bowl as needed to incorporate everything evenly.
  4. Mix dry ingredients: Add the all-purpose flour, baking powder, and salt to the wet mixture. Mix on medium-low speed just until the flour mixture is incorporated to avoid overmixing.
  5. Incorporate zucchini: Gently fold in the grated and drained zucchini using low speed or by hand. The batter should be somewhat runny; if it looks dry, allow it to sit for 5 minutes to let the zucchini release some moisture.
