This Butterscotch Pudding Bread is a delightful and moist quick bread infused with the rich, creamy flavor of butterscotch pudding mix. Ingredients

Batter

  • 1 1/2 Cup All Purpose Flour
  • 2 Large Eggs
  • 1/2 Cup Unsalted Butter, melted
  • 1/4 tsp Salt
  • 1 tsp Baking Powder
  • 3/4 Cup White Sugar
  • 2/3 Cup 2% Milk
  • 1 Package Jell-O Butterscotch Pudding Mix (99g)

Icing (Optional)

  • 1/2 Cup Icing Sugar
  • 1 Tbsp 2% Milk

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a loaf pan with oil or butter to prevent sticking.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the sugar, eggs, and melted butter. Mix thoroughly until well combined.
  3. Add Remaining Ingredients: Add the milk, butterscotch pudding mix, baking powder, and salt to the bowl. Mix again until fully incorporated.
  4. Incorporate Flour: Slowly add the all-purpose flour to the batter and gently fold it in, ensuring there are no clumps and the batter is smooth.
  5. Pour and Bake: Pour the batter into the prepared loaf pan, spreading evenly. Bake in the preheated oven for 55-70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Add Icing: Once baked, allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. If desired, mix icing sugar with milk to make a glaze and drizzle over the cooled bread.
  7. Serve and Enjoy: Slice the bread and enjoy it fresh as a sweet snack or dessert.

  • Make sure not to overmix the batter once the flour is added to keep the bread tender.
  • If you don’t have butterscotch pudding mix, vanilla pudding mix can be substituted but the flavor will change.
