Ingredients

Lemonade

  • 150 ml lemon juice (juice of approximately 2 lemons, strained)
  • 225 g brown sugar
  • 1500 ml drinking water (chilled)

Caramelized Lemon Slices

  • 100 ml water
  • 100 g sugar
  • 1 lemon – sliced (approximately 2mm or 3mm thickness)

Instructions

  1. Prepare the brown sugar syrup: Measure 500 ml of room temperature water in a measuring jug and stir in the brown sugar until fully dissolved to create the syrup base.
  2. Combine lemonade mixture: Transfer the brown sugar syrup into a 2-liter pitcher, then strain in the fresh lemon juice. Add the remaining chilled water to the pitcher and stir well to combine all ingredients evenly.
  3. Chill the lemonade: Place the prepared lemonade in the refrigerator to keep chilled until ready to serve. Adjust ice cubes as desired, noting to reduce water quantity accordingly to avoid dilution.
  4. Make caramelized lemon slices (prepare ahead): In a wide saucepan, mix 100 ml water with 100 g sugar and heat over low temperature. Stir continuously until the sugar fully dissolves to form a clear syrup.
  5. Cook lemon slices in syrup: Lay lemon slices in a single layer in the syrup, avoiding overlap. Cook at low heat, turning slices every 20 minutes to coat evenly.
  6. Monitor syrup color: Continue to cook until the sugar syrup turns amber, indicating caramelization.
  7. Dry lemon slices: Carefully transfer the caramelized lemon slices onto a parchment-lined tray, spacing them apart to prevent sticking. Allow them to air dry and set overnight uncovered.
  8. Store the lemon slices: Once dry, stack the lemon slices separated by parchment paper squares and refrigerate until needed for garnishing your lemonade.
