These Blackberry Mojito Popsicles are a refreshing frozen treat that combines the tartness of blackberries with the bright freshness of mint and lime, enhanced with a splash of white rum for a spirited twist. Perfect for warm days, these popsicles offer a deliciously fruity and cooling way to enjoy a mojito in icy form.

Ingredients

Fruit and Herbs

  • 2 cups blackberries
  • 1 cup fresh mint leaves

Sweetener and Citrus

  • 1/4 cup sugar
  • 1/4 cup fresh lime juice

Alcohol

  • 1/3 cup white rum

Instructions

  1. Blend Ingredients: In a blender, combine the blackberries, fresh mint leaves, sugar, and fresh lime juice. Blend until smooth and puréed, ensuring all ingredients are fully incorporated.
  2. Strain Mixture: Pour the blended mixture through a fine-mesh sieve to remove blackberry seeds and mint bits, creating a smooth base for the popsicles.
  3. Add Rum: Stir the white rum into the strained blackberry and mint mixture thoroughly to evenly distribute the alcohol.
  4. Fill Molds and Freeze: Pour the prepared mixture into popsicle molds. Insert popsicle sticks, then place the molds in the freezer. Freeze for at least 4 hours or until completely solid.

Notes

  • To remove seeds easily, press the mixture gently through the sieve with a spatula or wooden spoon.
  • Adjust sugar quantity based on the sweetness of your blackberries and personal taste preferences.
  • For a non-alcoholic version, simply omit the rum and add a splash of club soda or additional lime juice for freshness.
  • Ensure molds are fully frozen before serving to prevent popsicles from melting too quickly.
  • Can be stored in the freezer for up to 2 weeks in an airtight container for best flavor and texture.
