This Bellini Peach Raspberry Iced Tea is a refreshing and fruity summer drink inspired by the famous Olive Garden recipe. Combining the sweetness of homemade peach raspberry syrup with chilled black tea and ice, it’s an easy-to-make beverage perfect for warm days.

Ingredients

Peach Raspberry Syrup:

  • ½ cup peaches, sliced
  • ½ cup raspberries
  • ½ cup granulated sugar
  • ½ cup water

Bellini Peach Raspberry Iced Tea:

  • 1 cup black tea, chilled
  • 2 to 4 tablespoons peach raspberry syrup
  • Handful of ice

Instructions

  1. Make the Peach Raspberry Syrup: In a saucepan over medium heat, combine the sliced peaches, raspberries, granulated sugar, and water. Stir occasionally and heat gently without letting it boil. Continue heating for 5 to 8 minutes until the sugar dissolves completely, mashing the fruit with a fork to release its juices.
  2. Strain and Cool Syrup: Remove the saucepan from heat and strain the mixture through a fine sieve to separate the syrup from the fruit solids. Set the syrup aside and allow it to cool to room temperature.
  3. Assemble the Iced Tea: In a glass, combine the chilled black tea, 2 to 4 tablespoons of the cooled peach raspberry syrup depending on your desired sweetness, and a handful of ice. Stir well to mix and serve immediately for a refreshing drink.

Notes

  • You can adjust the amount of syrup in the iced tea to suit your preferred sweetness level.
  • For a stronger fruit flavor, use fresh ripe peaches and raspberries.
  • Black tea can be substituted with green tea or herbal tea according to taste.
  • To make the syrup ahead of time, store it in an airtight container in the refrigerator for up to one week.
  • For a sparkling twist, use sparkling water instead of regular black tea.
