Bang Bang Chicken is a crispy, spicy, and delicious dish featuring battered and panko-coated chicken pieces that are fried or air-fried to golden perfection and tossed or drizzled with a creamy, sweet, and tangy Bang Bang sauce.

Ingredients

Batter

  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 2 teaspoons onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon chili powder
  • 1½ cups buttermilk
  • 1 extra large egg (beaten)
  • 2 teaspoons hot sauce

Chicken

  • 1 pound boneless skinless chicken breasts or thighs, cut into 1-inch pieces
  • 3½ cups panko bread crumbs
  • 3 cups vegetable oil (for frying) or cooking spray (for air fryer)

Bang Bang Sauce

  • ½ cup mayonnaise
  • ⅓ cup sweet chili sauce
  • 2 tablespoons hot sauce
  • 1 tablespoon honey
  • ½ tablespoon rice wine vinegar

Instructions

  1. Prepare the sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, hot sauce, honey, and rice wine vinegar until smooth. Set aside.
  2. Make the batter: In a medium bowl, mix flour, cornstarch, onion powder, salt, black pepper, and chili powder. Add buttermilk, beaten egg, and hot sauce. Whisk until smooth. Add chicken pieces and stir to coat completely.
  3. Coat with panko: Spread panko bread crumbs in a flat dish. Press each battered chicken piece into the panko until fully coated.
  4. To Fry: Heat vegetable oil in a skillet or saucepan to 325°F. Fry chicken pieces in small batches for 3 to 4 minutes until golden brown and internal temperature reaches 165°F (about 4 minutes for thighs, turning halfway). Drain on paper towels. Keep oil temperature consistent and repeat with remaining chicken.
  5. To Air Fry: After coating chicken in panko, refrigerate for 15 minutes. Preheat air fryer to 400°F. Arrange chicken in a single layer without crowding, spray both sides with cooking spray. Air fry for 6 minutes, flip, and cook for 5 more minutes until golden and internal temperature hits 165°F. Cook in batches if necessary.
  6. Serve: Drizzle bang bang sauce over the cooked chicken or serve it on the side for dipping.
