Cheese Mixture

  • 8 ounces whole milk ricotta cheese

  • Zest of 1 lemon
  • 1 teaspoon lemon juice
  • ½ teaspoon coarse salt
  • Fresh cracked black pepper, to taste

Topping

  • 6 ounces blackberries
  • 2 tablespoons honey

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the dip.
  2. Prepare Baking Dish: Lightly spritz a 9-inch oval or similar shallow baking dish with cooking spray to prevent sticking. Ensure the dish has at least a 3-cup volume.
  3. Blend Cheese Mixture: In a food processor, combine ricotta cheese, softened goat cheese, large egg, lemon zest, lemon juice, chopped thyme, salt, freshly cracked black pepper, and minced garlic. Blend for about 2 minutes until the mixture is smooth and creamy. Pour this mixture evenly into the prepared baking dish.
  4. Add Blackberries and Bake: Scatter the blackberries evenly on top of the cheese mixture. Place the dish in the oven and bake for 30 minutes, or until the cheese is bubbly and the blackberries have released their juices and become saucy.
