Ingredients

Salmon and Vegetables

  • 6 ounces MOWI Essential Fresh Atlantic Salmon
  • 1 cup cherry tomatoes, quartered
  • ¼ cup green pepper, chopped
  • ¼ cup red onion, chopped
  • 2 tablespoons kalamata olives, pitted
  • 1 garlic clove, pressed
  • 2 tablespoons crumbled feta cheese

Seasonings and Garnish

  • ¼ teaspoon salt, divided
  • ¼ teaspoon oregano, divided
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon crushed red pepper
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat and Prepare Salmon: Preheat your oven to 400°F (204°C). Pat the salmon dry with paper towels to remove excess moisture for better roasting.
  2. Combine Vegetables and Seasonings: In an oven-safe rectangular 9×13 ceramic baking dish, add the quartered cherry tomatoes, chopped green peppers, chopped red onions, crumbled feta cheese, kalamata olives, pressed garlic, half the salt, and half the oregano. Drizzle with olive oil and toss gently until all ingredients are well combined and coated.
  3. Arrange Salmon and Add Remaining Seasonings: Place the dried salmon fillet in the center of the baking dish, surrounded by the vegetable and feta mixture. Sprinkle the remaining oregano and crushed red pepper evenly over the salmon. Optionally drizzle a little more olive oil on top for added moisture.
  4. Bake the Dish: Place the baking dish in the preheated oven and bake for approximately 15 minutes, or until the tomatoes have softened and the salmon is cooked through and flakes easily with a fork.
  5. Garnish and Serve: Remove the dish from the oven and garnish with fresh basil leaves. Serve hot, optionally accompanied by your choice of side such as rice, couscous, or a fresh salad.
