Ingredients

Vegetables

  • 45 Persian cucumbers, cut into rounds
  • 78 mini sweet bell peppers, sliced into rings
  • 2 large carrots, peeled and cut into ribbons or small pieces
  • 1 medium shallot, thinly sliced

Dressing & Seasoning

  • ¼ cup Asian miso ginger dressing (any brand)
  • 1 tablespoon chili crunch oil
  • 1 tablespoon everything bagel seasoning

Instructions

  1. Prepare the Vegetables: Wash and cut the Persian cucumbers into rounds, slice the mini sweet bell peppers into rings, peel and cut the carrots into ribbons or small pieces, and thinly slice the shallot. Add all the chopped vegetables into a large mixing bowl.
  2. Add Dressing: Pour ¼ cup of Asian miso ginger dressing over the vegetables in the bowl. Toss well to evenly coat all the ingredients with the dressing.
  3. Season the Salad: Drizzle 1 tablespoon of chili crunch oil over the salad, then sprinkle 1 tablespoon of everything bagel seasoning. Toss everything together until well combined and the seasoning is evenly distributed.
  4. Optional Chilling: You can serve the salad immediately or cover and chill it in the refrigerator for 1 hour to allow the flavors to meld. Toss again before serving for best flavor.
