Delicious and easy-to-make Almond Flour Biscuits that are keto-friendly and gluten-free. These biscuits combine almond flour, butter, cream cheese, and eggs to create soft, fluffy, and flavorful biscuits perfect for low-carb diets or those avoiding gluten.

Ingredients

Dry Ingredients:

  • 2 cups blanched almond flour
  • ½ tbsp. baking powder
  • ¼ tsp. salt

Wet Ingredients:

  • 4 tbsp. butter
  • 2 ounces cream cheese, softened
  • 3 large eggs

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a large baking sheet with parchment paper to prevent sticking.
  2. Combine Dry Ingredients: In a large mixing bowl, combine the blanched almond flour, baking powder, and salt. Stir well to evenly distribute the ingredients.
  3. Melt Butter and Mix with Cream Cheese: Place the butter in an oven-safe dish and melt it in the preheating oven, watching carefully as it melts quickly. Once melted, remove from the oven and add the softened cream cheese. Mix together with a fork until the mixture is smooth and creamy. Set aside to cool slightly.
  4. Beat Eggs: In a separate small bowl, beat the three large eggs until well blended.
  5. Combine Wet and Dry Ingredients: Add the beaten eggs to the dry mix, then pour in the butter and cream cheese mixture. Stir thoroughly until all ingredients are fully incorporated and the batter is smooth.
  6. Form Biscuits: Using a cookie scoop or a large tablespoon, portion equal amounts of dough onto the parchment-lined baking sheet, spacing them apart to allow for slight spreading.
  7. Bake: Place the baking sheet in the preheated oven and bake the biscuits for 15 minutes, or until they are golden brown and cooked through.
  8. Cool and Serve: Remove the biscuits from the oven and allow them to cool slightly before serving. Enjoy warm or at room temperature.

Notes

  • Make sure to use blanched almond flour for best texture and consistency.
  • Softened cream cheese blends better and helps create a smooth batter.
  • Watch the butter carefully as it melts in the oven to avoid burning.
  • You can store leftovers in an airtight container in the refrigerator for up to 5 days.
  • These biscuits can be reheated briefly in a toaster oven or microwave for a fresh taste.
