Ingredients

Watermelon and Goat Cheese Appetizer

  • 1 mini seedless watermelon Dulcinea, preferably
  • 68 ounces goat cheese
  • 2 tablespoons milk, or more to make creamy
  • 1 Persian cucumber
  • 23 limes

Instructions

  1. Prepare Watermelon: Wash watermelons well. Cut a thin slice off one side to give you a flat surface. Roll melon to flat side and cut 1″ wide pieces of watermelon.
  2. Create Indentations: Use a round or square cookie cutter to cut pieces of melon. With the small end of a melon baller tool, cut little half rounds out of the center of each piece.
  3. Prepare Goat Cheese Filling: Whip goat cheese and milk together until creamy. Transfer the mixture into a piping bag fitted with a star tip.
  4. Assemble: Pipe the goat cheese filling into the indentations on the watermelon pieces. Garnish with a slice of cucumber. Squeeze lime juice over the top.
  5. Serve: Place the appetizers on a flat plate and serve.
