Ingredients

Cucumbers:

4-5 Persian cucumbers, cut into rounds

Bell Peppers:

7-8 mini sweet bell peppers, sliced into rings

Carrots:

2 large carrots, cut into ribbons or small pieces

Shallot:

1 medium shallot, thinly sliced

Dressing:

1/4 cup Asian miso ginger dressing

Chili Oil:

1 tablespoon chili crunch oil

Seasoning:

1 tablespoon everything bagel seasoning

Instructions

  1. Add all chopped veggies to a large bowl. Combine cucumbers, bell peppers, carrots, and shallot.
  2. Pour dressing over the salad and toss to coat. Ensure all veggies are well coated.
  3. Add chili oil and bagel seasoning; toss to combine. Mix until evenly distributed.
  4. Top with more bagel seasoning if desired, then serve immediately or chill. For best flavor, chill for 1 hour, toss again, then serve.
