A creamy and rich vegan peanut butter mousse topped with a decadent chocolate ganache. This indulgent dessert is easy to make, requires no baking, and is perfect for anyone following a vegan or dairy-free diet.

Ingredients

  • 1 cup peanut butter (smooth)
  • 1/2 cup coconut cream (from a can of full-fat coconut milk)
  • 1/4 cup maple syrup (or any liquid sweetener)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup dark chocolate chips
  • 2 tablespoons coconut oil
  • 1 tablespoon maple syrup (for the ganache)

Instructions

  1. In a mixing bowl, combine peanut butter, coconut cream, maple syrup, vanilla extract, and a pinch of salt. Mix until smooth and creamy using a hand mixer or whisk.
  2. Set the mousse aside.
  3. In a small saucepan, melt dark chocolate chips and coconut oil over low heat, stirring until smooth. Remove from heat and stir in maple syrup.
  4. Layer the peanut butter mousse and chocolate ganache in small serving glasses or bowls. Repeat the layers for a richer dessert.
  5. Chill the mousse in the fridge for at least 2 hours to allow it to set.
  6. Serve chilled and enjoy!
