This Tomato Basil Grilled Cheese sandwich offers a delightful twist on the classic grilled cheese by incorporating fresh mozzarella, ripe tomatoes, and aromatic basil leaves. Enhanced with a drizzle of balsamic vinegar and a hint of crushed red pepper flakes for a subtle kick, this recipe combines creamy, tangy, and fresh flavors all melted between buttery sourdough slices. Perfectly grilled on the stovetop until golden and melty, it’s an easy yet elegant meal ideal for lunch or a comforting snack.

Ingredients

Bread and Butter

  • 4 slices sourdough bread
  • 4 tablespoons unsalted butter, softened

Filling

  • 1 cup fresh mozzarella cheese, sliced
  • 1 cup ripe tomatoes, thinly sliced
  • 1/4 cup fresh basil leaves
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • Optional: A pinch of crushed red pepper flakes for heat

Instructions

  1. Prepare the Ingredients: Gather all your ingredients, ensuring the butter is softened and spreadable at room temperature to make application easier.
  2. Assemble the Sandwich: Lay two slices of sourdough bread on a clean surface and spread 1 tablespoon of softened butter on one side of each slice. These buttered sides will be on the outside when grilling.
  3. Layer the Cheese and Tomatoes: On the unbuttered side of one slice, layer fresh mozzarella cheese evenly, then add the thin tomato slices on top. Drizzle with balsamic vinegar and season with salt, pepper, and if desired, a pinch of crushed red pepper flakes for heat.
  4. Add the Basil: Place fresh basil leaves gently on top of the tomatoes to add a fresh, aromatic flavor.
  5. Top with Bread: Place the second slice of bread on top of the layered ingredients, buttered side facing up.
  6. Grill the Sandwich: Preheat a skillet over medium heat. Once hot, carefully place the sandwich on the skillet and cook until the bottom is golden brown, about 3 to 4 minutes.
  7. Flip and Cook Again: Using a spatula, flip the sandwich carefully to cook the other side until it is also golden brown and the mozzarella has melted, approximately another 3 to 4 minutes.
  8. Serve: Remove the sandwich from the skillet and let it cool for a minute. Slice in half diagonally for a classic presentation.
  9. Enjoy: Serve warm. This grilled cheese pairs beautifully with tomato soup or a fresh green salad for a well-rounded meal.

Notes

  • For a crispier sandwich, press down slightly with the spatula while grilling to ensure even browning.
  • Use fresh, ripe tomatoes for the best flavor and less moisture to avoid soggy bread.
  • Adjust the amount of basil based on your preference for herbaceousness.
  • Optional crushed red pepper flakes can be omitted or replaced with black pepper for milder heat.
  • You can substitute sourdough with other sturdy bread varieties like ciabatta or country white bread.
