Ingredients

For the Thai Peanut Sauce

  • 2 tablespoons chili-garlic sauce or sriracha
  • 1 tablespoon sesame oil

For the Thai Peanut Noodles

  • 8 ounces noodles (rice, flour, egg, ramen, or udon noodles)
  • 1-2 tablespoons sesame oil
  • Garnish: crushed red pepper flakes, fresh chopped green onion, crumbled roasted peanuts or sesame seeds

Instructions

  1. Make the Thai Peanut Sauce: In a small bowl, whisk together peanut butter, soy sauce, rice wine vinegar, chili-garlic sauce, sesame oil, honey, lime juice, garlic powder (or fresh garlic), and ginger powder (or fresh ginger) until smooth and well combined. Add water a teaspoon at a time until the sauce reaches your desired consistency.
  2. Cook the Noodles: Prepare the noodles according to the package instructions by boiling them in hot water for about 4-5 minutes or until tender. Drain well.
  3. Heat the Sauce: In a wok or large pan, heat sesame oil over medium heat. Add the prepared peanut sauce and stir continuously, heating for about 1 minute to warm through and blend the flavors.
  4. Combine Noodles and Sauce: Add the cooked noodles to the pan and toss thoroughly to coat them evenly with the peanut sauce.
  5. Serve and Garnish: Transfer the coated noodles to serving bowls and garnish with crushed red pepper flakes, chopped green onions, and crumbled roasted peanuts or sesame seeds. Serve immediately.
