Ingredients

Peaches

  • 2 large or 3 medium ripe-firm peaches, halved and pitted

Streusel Filling

  • 2 tablespoons all-purpose flour
  • 3 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • ⅛ teaspoon cinnamon
  • ⅛ teaspoon salt
  • 2-3 tablespoons chopped pecans (optional)
  • ¼ cup oats, quick cooking or regular
  • 2 tablespoons chilled butter, cut into small pieces

Instructions

  1. Preheat and Prepare Baking Dish: If using an oven, preheat it to 350°F. Butter a baking dish that can hold all the peaches comfortably and set aside. If using an air fryer, you can skip this step and proceed directly to preparing the peaches.
  2. Scoop Peach Centers: Using a melon baller, gently scoop out and discard the red flesh from the center of each peach half, creating a cavity large enough to hold the streusel filling while leaving enough peach flesh for stability.
  3. Make Streusel Filling: In a bowl, combine the flour, brown sugar, granulated sugar, cinnamon, salt, chopped pecans (if using), and oats. Add the chilled, diced butter and use your fingers to rub the butter into the mixture until it becomes crumbly with pea-sized butter pieces. Alternatively, use a stand mixer with paddle attachment to mix to this consistency.
  4. Fill Peaches: Divide the streusel filling evenly and pack it firmly into the cavity of each peach half.
  5. Cook Peaches (Air Fryer Method): Place the stuffed peaches cut side up in the air fryer basket. Set the temperature to 350°F and cook for 5-15 minutes. Start checking at 5 minutes by gently squeezing the peaches to check softness. The topping should be lightly browned and the peaches soft but still holding shape. Remove and allow to cool slightly.
  6. Cook Peaches (Oven Method): Arrange the peaches cut side up in the prepared baking dish. Bake for 35-45 minutes until the topping is lightly browned and the peaches have softened but hold their shape. Remove from oven and allow to cool slightly.
  7. Serve: Serve the warm stuffed peaches topped with a scoop of vanilla ice cream for a delightful dessert.
