Ingredients

For the Seasoned Chicken:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste

For the Street Corn:

  • 4 ears of corn, husks and silk removed
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional)

For the Rice and Assembly:

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. Prepare the Chicken: In a medium bowl, combine the cubed chicken breasts with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Ensure the chicken is evenly coated.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Cook the chicken for 5-7 minutes per side, or until cooked through and golden-brown. Remove from pan and set aside.
  3. Make the Street Corn: Cook the corn using your preferred method. Cut the kernels off the cob and combine with the remaining street corn ingredients.
  4. Cook the Rice: Rinse the rice, then cook according to package instructions.
  5. Assemble the Bowls: Layer rice, chicken, street corn, black beans, avocado, and a drizzle of hot sauce in serving bowls. Garnish with lime wedges.
