Ingredients

Yeast Mixture

  • 50 grams warm water
  • 1 1/2 teaspoons active dry yeast
  • 1 tablespoon granulated sugar

Dough

  • 280 grams all-purpose flour
  • 50 grams granulated sugar
  • 50 grams milk
  • 2 egg yolks
  • 40 grams soft butter
  • 3 liters sunflower oil (for deep frying)

Filling

  • 150 grams cream cheese
  • 50 grams powdered sugar
  • 80 grams strawberry jam

Decoration

  • 6 fresh strawberries
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Prepare Yeast Mixture: In a bowl, combine warm water, active dry yeast, and 1 tablespoon of granulated sugar. Stir gently and let it rest for about 10 minutes until the mixture becomes bubbly and frothy, indicating the yeast is active.
  2. Mix Dough Ingredients: In a stand mixer or large bowl, combine all-purpose flour and 50 grams granulated sugar. Add the two egg yolks, soft butter, and milk. Once the yeast mixture is ready, add it to the dry ingredients.
  3. Knead Dough: Use a stand mixer fitted with a dough hook to knead the dough on medium speed for 15 to 20 minutes until smooth and elastic. Alternatively, knead by hand until similarly developed.
  4. Proof Dough: Lightly grease a bowl, place the dough inside, cover, and proof in a warm environment at approximately 29°C (84°F) for 1 hour and 30 minutes or until the dough doubles in size.
  5. Shape Donuts: Roll out the dough to about 0.25 cm (0.1 inches) thickness on a floured surface. Use a 6 cm (2.36 inch) cookie cutter to cut donut rounds. Place on a baking sheet and proof again in the warm environment for 30 minutes until they puff to about 0.5 cm (0.2 inches) thick.
  6. Heat Oil: Heat sunflower oil in a deep frying pan or fryer to 180°C (356°F), maintaining about 175°C (347°F) when frying by adjusting heat as needed.
  7. Fry Donuts: Carefully fry donuts in hot oil, about 2 minutes per side, flipping once or twice, until golden brown all around. Remove with a slotted spoon.
  8. Drain Oil: Place fried donuts on paper towels to absorb excess oil. Let cool slightly before filling.
  9. Prepare Strawberry Cheesecake Filling: In a bowl, beat cream cheese with powdered sugar until smooth. Fold in strawberry jam until creamy and fully combined.
  10. Fill Donuts: Using a piping bag, carefully inject strawberry cheesecake filling into each cooled donut to create a generous center without bursting the dough.
  11. Decorate: Top each filled donut with a fresh strawberry, add a small dollop of strawberry jam, and dust lightly with powdered sugar. Serve immediately and enjoy!

Notes

  • Maintain the oil temperature carefully to avoid greasy donuts or undercooked centers.
  • Strawberry jam can be substituted with other fruit jams of your choice.
  • Using a stand mixer with a dough hook makes kneading easier, but hand kneading also works well.
