These Spinach and Feta Cheese Puff Pastry Rolls are a delightful savory treat combining flaky, buttery puff pastry with a rich filling of fresh spinach and tangy feta cheese. Perfect as a snack, appetizer, or light meal, they come together quickly and are always crowd-pleasers.

Ingredients

  • Puff pastry sheets
  • Fresh spinach, chopped
  • Feta cheese, crumbled
  • Onion, finely chopped
  • Garlic, minced
  • Olive oil
  • Salt
  • Black pepper
  • Nutmeg (optional)
  • Egg (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the garlic and cook for another minute until fragrant.
  4. Stir in the chopped spinach and cook until wilted. Remove from heat and let cool slightly.
  5. In a bowl, combine the cooked spinach mixture with crumbled feta, salt, pepper, and a pinch of nutmeg if using.
  6. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into rectangles (about 3×4 inches).
  7. Spoon the spinach and feta mixture onto each rectangle, then roll the pastry up, sealing the edges with a bit of water.
  8. Place the rolls seam-side down on the baking sheet. Brush the tops with beaten egg for a golden finish.
  9. Bake for 15-20 minutes, or until the pastry is puffed and golden brown.
  10. Remove from oven and let cool slightly before serving.

Notes

  • Ensure the spinach is well-drained to prevent soggy pastry.
  • Brush pastry edges with water to seal properly.
  • Variations include adding sun-dried tomatoes or kalamata olives.
  • For vegan version, use plant-based feta and egg substitute.
  • Store rolls in airtight container in refrigerator for up to 3 days; reheat in oven at 350°F for 10 minutes.
  • Frozen spinach can be used if thawed and excess moisture squeezed out.
