These Southwest Egg Rolls are a delicious and flavorful appetizer or snack packed with seasoned chicken, black beans, corn, spinach, peppers, and melted Monterey Jack cheese, all wrapped in crispy egg roll wrappers. Ingredients

Filling

  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeno (de-seeded)
  • 1/2 tbsp cumin
  • 1/2 tbsp chili powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 cups Monterey Jack cheese

Wrapper

  • 1 package egg roll wrappers (20 wrappers)

Instructions

  1. Prepare Filling: In a large bowl, combine shredded or chopped cooked chicken, corn, black beans, chopped spinach, diced red bell pepper, and de-seeded diced jalapeno. Add cumin, chili powder, salt, and black pepper to the mixture and stir well to incorporate all spices evenly.
  2. Add Cheese: Stir in the 2 cups of Monterey Jack cheese into the filling mixture thoroughly, ensuring cheese is distributed well.
  3. Assemble Egg Rolls: Lay one egg roll wrapper on a clean surface with a pointed corner facing toward you. Place approximately 2 to 3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner of the wrapper over the filling, then fold in both side corners tightly against the filling, and continue to roll it up tightly. Seal the edges by dipping a finger in water and pressing along the edges. Place wrapped egg rolls seam side down on a baking sheet.
  4. Freeze Egg Rolls: Place the assembled egg rolls into the freezer while you prepare your oil or preheat the oven. This helps maintain the shape during cooking.
  5. Frying Method: In a large skillet, add oil to a depth of about 1 inch and heat over medium-high heat until it reaches 350°F (175°C). Carefully add a few egg rolls at a time, spacing them apart so they don’t touch. Fry each side for 2 to 3 minutes until golden brown and crispy. Remove and drain on paper towels. Repeat with remaining egg rolls.
  6. Baking Method: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Lightly brush egg rolls with oil and place them seam side down on the sheet. Bake for 15 to 20 minutes, flipping halfway through, until egg rolls are golden and crisp.
