Ingredients

Crust Ingredients:

  • 2 cups graham crackers, finely crushed
  • 10 tbsp butter, melted

Cheesecake Ingredients:

  • 24 oz cream cheese, room temperature
  • ½ cup sour cream, room temperature
  • 1 cup milk or semi-sweet chocolate chips, melted
  • 1 ½ cups powdered sugar
  • 2 tsp vanilla extract

Toasted Marshmallow Meringue Ingredients:

  • 6 egg whites
  • 2 cups sugar

Instructions

  1. Prepare the Crust – Finely crush the graham crackers and mix with melted butter. Press into the bottom of an 8″ springform pan to form a crust.
  2. Prepare the Cheesecake – Beat cream cheese until smooth. Mix in sour cream, melted chocolate, powdered sugar, and vanilla. Pour over crust.
  3. Chill the Cheesecake – Refrigerate for at least 4 hours or overnight.
  4. Prepare the Toasted Marshmallow Meringue – Combine egg whites and sugar in a bowl. Heat over a double boiler until frothy and reaches 160°F. Beat until fluffy.
  5. Assemble the Cheesecake – Spread the meringue over the chilled cheesecake. Optionally, torch the meringue for a golden finish.
