These Smashed Chickpea Avocado Dill Pickle Sandwiches are a delicious and healthy alternative to traditional mayonnaise-based sandwich fillings. Packed with creamy avocado, tangy dill pickles, and fresh herbs, this flavorful and satisfying sandwich is perfect for a quick lunch at home or a picnic. The combination of protein-rich chickpeas and heart-healthy fats from avocado creates a nourishing, plant-based meal that’s easy to prepare and customize.

Ingredients

Main Filling

  • 1 ½ cups cooked chickpeas (or 1 14-oz can, drained and rinsed)
  • 1 ripe avocado, pitted
  • 3 tablespoons freshly squeezed lemon juice
  • 1 large garlic clove, minced
  • 1 celery rib, diced
  • ¼ cup finely chopped pickles
  • ¼ cup finely chopped dill, or to taste
  • 2 green onions, finely chopped
  • Pinch of fine sea salt
  • Pinch of freshly ground black pepper

For Serving

  • Whole grain bread, pitas, bagels, or tortillas
  • Lettuce or arugula leaves
  • Mustard

Instructions

  1. Mash Chickpeas: Using a potato masher or the back of a fork, mash the cooked chickpeas until mostly broken up; a few whole chickpeas are fine for texture.
  2. Add Avocado: Mash the ripe avocado into the chickpeas until well combined and creamy.
  3. Mix Flavorings: Stir in freshly squeezed lemon juice, minced garlic, diced celery, finely chopped pickles, chopped dill, green onions, salt, and black pepper until evenly combined. Taste and adjust seasonings, adding more lemon juice or salt as preferred.
  4. Assemble Sandwich: Spread the smashed chickpea avocado mixture generously over a slice of whole grain bread or preferred bread alternative. Top with a lettuce or arugula leaf, add a thin layer of mustard if desired, and cover with the second slice of bread.
  5. Serve: Serve the sandwiches immediately for best freshness and flavor. Ideal for lunch or as a picnic option.

Notes

  • Use ripe avocado for creamy texture and rich flavor.
  • Pickles add tanginess; adjust quantity to taste.
  • Celery provides a nice crunch; finely dice to blend well.
  • Can be served with gluten-free bread or wraps to accommodate dietary needs.
  • Store leftover filling in an airtight container in the refrigerator for up to 2 days; the avocado may brown slightly but will remain tasty.
  • Optional: add a dash of hot sauce or smoked paprika for a spicy kick.
