Ingredients

  • 8 chicken, turkey, beef, or vegetarian sausage links or patties
  • 8 slices of bread (white or whole wheat)
  • 3 eggs
  • 1/2 cup milk
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking
  • Maple syrup for serving

Instructions

  1. Cook the sausage links or patties in a skillet over medium heat until fully cooked. Set aside to cool slightly.
  2. Flatten each slice of bread using a rolling pin until thin and flexible.
  3. Whisk together eggs, milk, cinnamon, and vanilla extract in a shallow bowl.
  4. Dip each bread slice into the egg mixture, coating both sides well.
  5. Place one cooked sausage link on the edge of each bread slice and roll tightly.
  6. Heat butter or oil in a skillet over medium heat. Place roll-ups seam side down to seal and cook until golden brown on all sides, turning occasionally.
