Ingredients

Meatballs

  • 1 lb ground beef
  • ½ tsp sea salt
  • ¼ tsp black pepper, omit for AIP
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • 2 tsp coconut aminos
  • 2 tsp compliant ketchup (Whole30 and AIP compliant options available)
  • 1 tbsp avocado oil

Gravy

  • 1 tbsp avocado oil
  • ½ yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 ½ cups mushrooms, sliced
  • 1 cup beef broth
  • 1 tbsp coconut aminos
  • 1 tbsp compliant ketchup
  • ½ tsp sea salt
  • ¼ tsp black pepper, omit for AIP
  • 2 tsp arrowroot starch
  • 1 tbsp chopped parsley, for topping

Instructions

  1. Prepare Meatball Mixture: In a large bowl, mix together all the meatball ingredients (ground beef, sea salt, black pepper, dried thyme, oregano, coconut aminos, ketchup, and avocado oil) until well combined. Shape into uniform-sized meatballs to ensure even cooking.
  2. Brown Meatballs: Heat avocado oil in a large pan over medium heat. Add the meatballs and cook for approximately 3-4 minutes on each side until browned and the internal temperature reaches 165°F (74°C). Remove cooked meatballs from the pan and set aside.
  3. Sauté Vegetables: In the same pan, add additional avocado oil if needed. Sauté thinly sliced onion for 5-6 minutes until softened. Add minced garlic and cook for another 1 minute. Then add sliced mushrooms and continue cooking for 3-4 minutes until they are tender.
  4. Create Gravy: Pour in beef broth, coconut aminos, compliant ketchup, sea salt, and black pepper. Stir to combine all ingredients thoroughly.
  5. Thicken Sauce: Whisk in arrowroot starch to the gravy mixture. Reduce heat and allow the sauce to simmer gently for 2-3 minutes until it thickens to desired consistency.
  6. Simmer Meatballs in Gravy: Return the browned meatballs to the pan, spoon the thickened sauce over them, and simmer for a few minutes more to reheat and blend flavors.
  7. Garnish and Serve: Serve the Salisbury steak meatballs hot, topped with chopped parsley. For a complete meal, serve over mashed sweet potatoes or your choice of side dish.
