Raspberry Bliss Balls with Dates are a healthy, no-bake snack combining the natural sweetness of Medjool dates, fresh or frozen raspberries, rolled oats, and coconut. Enhanced with chia seeds and a hint of vanilla, these nutritious energy bites are perfect for a quick treat or a boost of energy anytime. Optionally rolled in extra coconut or cacao powder, these bliss balls offer a deliciously tangy and sweet flavor with a satisfying chewy texture.

Ingredients

Main Ingredients

  • 1 ½ cups rolled oats
  • 1 ½ cups desiccated coconut
  • 1 ⅓ cups raspberries, fresh or frozen
  • 18 Medjool dates, pitted (about 330 grams once pitted)
  • 1 teaspoon vanilla paste or extract
  • 2 tablespoons chia seeds
  • Pinch of salt
  • 3 tablespoons acai powder (optional)

Optional for Rolling or Garnish

  • Extra desiccated coconut
  • Cacao powder
  • Melted dark chocolate for drizzling

Instructions

  1. Prepare Ingredients: Start by ensuring your dates are pitted. Use either fresh or frozen raspberries according to availability. Gather all ingredients to have them ready for processing.
  2. Blend the Mixture: Place rolled oats, desiccated coconut, raspberries, pitted Medjool dates, vanilla paste or extract, chia seeds, pinch of salt, and optional acai powder into a food processor. Blend the ingredients until the mixture breaks down and begins to stick together, which usually takes a couple of minutes. Pause to scrape down the sides of the food processor once or twice to ensure an even blend.
  3. Form Balls: Using clean hands, roll the sticky mixture into firm balls of your preferred size, typically about 1 to 1.5 inches in diameter for easy snacking.
  4. Optional Coating: If desired, roll the bliss balls in extra desiccated coconut or cacao powder to add texture and extra flavor. Alternatively, drizzle with melted dark chocolate for an indulgent finish.
  5. Chill and Serve: Place the bliss balls in the refrigerator to chill until firm. Serve chilled as a nutritious snack or energy bite anytime you need a boost.

Notes

  • Using frozen raspberries may add extra moisture; you might need to adjust the amount of oats or coconut slightly if the mixture feels too wet.
  • Acai powder is optional but adds a boost of antioxidants and a subtle berry flavor.
  • Medjool dates are preferred for their natural sweetness and sticky texture, which help bind the mixture.
  • Store the bliss balls in an airtight container in the refrigerator for up to one week, or freeze them for longer storage.
  • These bliss balls are naturally gluten-free if using gluten-free oats.
