Juicy, flavorful chicken skewers marinated with ranch, garlic, and Parmesan, grilled to perfection for a quick and delicious meal or appetizer.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons ranch seasoning or 1/4 cup ranch dressing
  • 2 cloves garlic, minced or 1 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Wooden or metal skewers (if wooden, soaked in water for 30 minutes)

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine the chicken pieces with ranch seasoning or dressing, minced garlic, grated Parmesan cheese, olive oil, salt, and pepper. Mix well to coat the chicken evenly.
  3. Thread the chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  4. Preheat the grill to medium-high heat.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.
  6. Remove from the grill and let rest for a few minutes before serving.

Notes

  • Chicken thighs can be used instead of breasts for extra juiciness.
  • Add vegetables like bell peppers, onions, or cherry tomatoes to skewers for added flavor and color.
  • Homemade ranch marinade can be used for ingredient control or to make it dairy-free.
  • Sprinkle smoked paprika or cayenne pepper for a spicy kick.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a skillet or oven to maintain juiciness; microwaving may affect texture.
  • Marinate chicken for at least 30 minutes, up to 4 hours for best flavor.
