Juicy chicken pieces marinated in a creamy ranch and garlic blend, sprinkled with Parmesan cheese, then grilled to perfection. Perfect as an appetizer, snack, or main dish.

Ingredients

  • 1 lb chicken breasts or thighs, cut into bite-sized pieces
  • 2 tbsp ranch seasoning mix
  • 2 cloves garlic, minced or 1 tsp garlic powder
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Wooden or metal skewers

Instructions

  1. Cut the chicken into evenly sized pieces for even cooking.
  2. Combine ranch seasoning, garlic, olive oil, salt, and pepper in a bowl. Toss chicken pieces in the marinade and let sit for at least 30 minutes or up to 2 hours.
  3. Thread the marinated chicken onto skewers.
  4. Sprinkle grated Parmesan cheese over the chicken on the skewers.
  5. Preheat grill to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  6. Let the skewers rest for a few minutes before serving to allow juices to redistribute.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • To prevent chicken from sticking, oil grill grates and brush skewers with olive oil before cooking.
  • Variations include adding bell peppers, cherry tomatoes, or red onions to skewers.
  • For a spicier version, add cayenne pepper or chili flakes to the marinade.
  • If no grill is available, bake skewers at 400°F for 15-20 minutes.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in oven at 350°F for 10 minutes for best results.
