Ingredients
1 lb chicken breasts or thighs, cut into bite-sized pieces
2 tbsp ranch seasoning mix
2 cloves garlic, minced or 1 tsp garlic powder
1/4 cup grated Parmesan cheese
2 tbsp olive oil
Salt and pepper, to taste
Wooden or metal skewers
Instructions
Cut the chicken into evenly sized pieces for even cooking.
Combine ranch seasoning, garlic, olive oil, salt, and pepper in a bowl. Toss chicken pieces in the marinade and let sit for at least 30 minutes or up to 2 hours.
Thread the marinated chicken onto skewers.
Sprinkle grated Parmesan cheese over the chicken on the skewers.
Preheat grill to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
Let the skewers rest for a few minutes before serving to allow juices to redistribute.
Notes
Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
To prevent chicken from sticking, oil grill grates and brush skewers with olive oil before cooking.
Variations include adding bell peppers, cherry tomatoes, or red onions to skewers.
For a spicier version, add cayenne pepper or chili flakes to the marinade.
If no grill is available, bake skewers at 400°F for 15-20 minutes.
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in oven at 350°F for 10 minutes for best results.
