These High Protein Rice Krispies are a delicious twist on the classic crispy treats, packed with vanilla protein powder for an extra boost. Soft, gooey, and perfect as a sweet snack or dessert, they combine the nostalgic crunch of Rice Krispies with added nutrition to satisfy your sweet tooth while fueling your body.

Ingredients

Main Ingredients

  • 5 cups Rice Krispies or crispy rice cereal
  • 2 tablespoons milk (regular or almond milk)
  • 1/2 cup vanilla flavored protein powder
  • 4 tablespoons salted butter
  • 10.5 ounce bag mini marshmallows
  • 1 teaspoon vanilla extract
  • Sprinkles (optional)

Instructions

  1. Prepare the Pan: Line a 9×9 inch pan with foil or parchment paper and grease it with butter or nonstick cooking spray to prevent the treats from sticking.
  2. Mix Protein and Milk: In a small bowl, whisk together the milk and vanilla protein powder until the mixture is smooth and well combined. Set this aside for later.
  3. Melt Butter: Heat a large pot or stock pot over medium heat and add the salted butter. Allow the butter to melt completely.
  4. Incorporate Marshmallows: Reduce the heat to low and add the entire bag of mini marshmallows to the melted butter. Stir continuously until the marshmallows are fully melted and smooth.
  5. Add Vanilla and Protein Mixture: Stir in the vanilla extract followed by the protein powder and milk mixture, blending everything evenly in the melted marshmallow base.
  6. Combine with Cereal: Remove the pot from heat and immediately add the Rice Krispies cereal. Stir until all the cereal is thoroughly coated with the marshmallow mixture.
  7. Transfer and Press: Pour the coated cereal mixture into the prepared pan and gently press it down using a spatula or your hands. Avoid pressing too hard to keep the treats soft and not overly dense. Optionally, sprinkle sprinkles on top for decoration.
  8. Set and Slice: Let the mixture rest at room temperature for 30 to 60 minutes until set. Once firm, slice into squares and enjoy your high protein treats!

Notes

  • For a dairy-free option, use almond milk and a vegan protein powder.
  • Pressing too hard when spreading the mixture will create denser, harder treats; press gently for a softer texture.
  • You can customize with different flavored protein powders to vary the taste.
  • Adding sprinkles is optional but makes these treats more festive and colorful.
  • Store leftovers in an airtight container at room temperature for up to 3 days for best freshness.
