Perfect for a solo breakfast treat that feels indulgent but is healthy and easy to prepare.

Ingredients

Oatmeal Base

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk of choice (unsweetened almond milk recommended)
  • 1 egg (or 1 flax egg for vegan option)
  • 1 Tbsp. natural creamy peanut butter
  • 1 Tbsp. maple syrup
  • 1/2 tsp. vanilla extract
  • Pinch sea salt
  • Optional add-ins: 2 Tbsp. collagen peptides, protein powder of choice, or powdered peanut butter

Peanut Butter Frosting

  • 1 Tbsp. natural creamy peanut butter
  • 2 tsp. milk of choice
  • 1 tsp. maple syrup
  • Fresh berries or sliced banana for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF to ensure it reaches the right temperature for baking the oatmeal evenly.
  2. Prepare Batter: In a blender or nutribullet, combine the rolled oats, milk, egg, peanut butter, maple syrup, vanilla extract, sea salt, and any optional add-ins like collagen peptides or protein powder. Pulse the mixture a few times until ingredients are well mixed but still have some texture from the oats; the batter should not be completely smooth.
  3. Bake: Pour the prepared batter into a greased 6-ounce ramekin or a large oven-safe mug. Place it carefully in the preheated oven and bake for 25 to 30 minutes. You’ll know it’s ready when the edges are set, and the center remains slightly giggly but mostly firm.
  4. Rest: Remove the baked oatmeal from the oven and let it sit for about 5 minutes to set and cool slightly, making it easier to eat and enhancing the texture.
  5. Make Frosting: Meanwhile, mix 1 tablespoon of natural creamy peanut butter with 2 teaspoons of milk and 1 teaspoon of maple syrup in a small bowl until smooth and creamy.
  6. Serve: Spoon the peanut butter frosting gently over the warm baked oatmeal. Garnish with fresh berries or sliced banana for a fresh, colorful finish and added flavor.

Notes

  • For a vegan version, substitute the egg with a flax egg (1 tbsp flaxseed meal + 3 tbsp water, mixed and set to thicken).
  • You can use any milk of choice, including dairy or plant-based alternatives; unsweetened almond milk works well.
  • Optional protein add-ins like collagen peptides or protein powder boost nutrition but can be omitted if preferred.
  • Adjust baking time slightly depending on your oven and the size of your ramekin or mug.
  • Fresh fruit toppings can be varied seasonally or to your taste.
  • The peanut butter frosting is optional but adds a delightful creamy sweetness.
