Ingredients

Rice Crispy Layer

  • 150 g Rice crispies
  • 140 g Golden syrup
  • 150 g Creamy peanut butter
  • 100 g Soft light brown sugar

Chocolate Peanut Layer

  • 225 g Chocolate (preferably dark or milk chocolate)
  • 3 tablespoons Creamy peanut butter
  • 1 sprinkle Flaky sea salt

Instructions

  1. Make the peanut butter syrup: In a saucepan over low-medium heat, combine the soft light brown sugar, golden syrup, and creamy peanut butter. Stir continuously for a couple of minutes until the mixture becomes slightly melted, smooth, and easier to work with. Then remove from heat.
  2. Combine with rice crispies: Transfer the peanut butter mixture to a large bowl and add the rice crispies. Mix thoroughly until all the crispies are evenly coated and the mixture holds together well.
  3. Form the crispy base: Divide the rice crispy mixture evenly among 12 cupcake cases. Press the mixture firmly into the edges and base of each case to form compact cups.
  4. Prepare the chocolate peanut layer: Melt the chocolate gently using a double boiler or microwave in short bursts, stirring until smooth. Stir in 3 tablespoons of creamy peanut butter until fully combined.
  5. Assemble the cups: Spoon the chocolate peanut mixture evenly on top of each rice crispy base in the cupcake cases. Sprinkle each with a pinch of flaky sea salt to enhance flavor.
  6. Set the cups: Allow the cups to set at room temperature for 30 minutes to 1 hour, or speed up the process by chilling them in the fridge until firm.
