Ingredients

Crust and Topping

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 3 cups all purpose flour, spooned and leveled
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 cup cold unsalted butter, cut into cubes
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Filling

  • 6 cups sliced peeled fresh peaches (approx. 7-8 peaches)
  • ⅓ cup granulated sugar
  • 1½ tablespoons cornstarch
  • 1-2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare Oven and Pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with foil or parchment paper, and spray it with non-stick cooking spray to prevent sticking.
  2. Make Crust and Topping Mixture: In a large bowl using a hand mixer or stand mixer fitted with the paddle attachment, combine granulated sugar, baking powder, all-purpose flour, ground cinnamon, and salt. Add the cold cubed butter, egg, and vanilla extract. Beat on low speed until the butter is evenly distributed in small pieces throughout the crumbly mixture.
  3. Press Crust into Pan: Take a little more than half of the crumb mixture and evenly press it into the bottom of the prepared pan using your hands or the bottom of a measuring cup to create the crust layer.
  4. Prepare Peach Filling: In a separate bowl, gently stir together the sliced peeled peaches, granulated sugar, cornstarch, lemon juice (1-2 tablespoons depending on peach ripeness), and ground cinnamon until well combined.
  5. Assemble Bars: Spread the peach filling evenly over the pressed crust. Then crumble the remaining crumb mixture over the top of the peaches to form the topping.
  6. Bake: Place the pan in the preheated oven and bake for approximately 45 minutes, or until the top is light golden brown and the peach juices are bubbly.
  7. Cool and Serve: Remove the pan from the oven and transfer it to a wire rack to cool completely before cutting into bars. Optionally, top with icing if desired.
