Ingredients

Dry Ingredients

  • 1/4 cup coconut flour
  • 2 scoops preferred vanilla or unflavored protein powder (collagen also works)
  • 1 heaping tbsp poppy seeds
  • Zest of 1/2 lemon

Wet Ingredients

  • 1/3 cup melted coconut oil
  • 1/4 cup maple syrup (add extra 1 tbsp if using unflavored protein powder)
  • Juice of 1/2 lemon

Optional Glaze Ingredients

  • 3 tbsp confectioners sugar
  • 2 tsp coffee creamer

Instructions

  1. Combine Dry Ingredients: In a mixing bowl, stir together almond flour, coconut flour, protein powder, poppy seeds, and lemon zest until well mixed.
  2. Melt and Mix Wet Ingredients: Melt coconut oil in a separate bowl with extra room to whisk in the maple syrup thoroughly, creating a smooth wet mixture.
  3. Form Dough: Fold the wet mixture into the dry ingredients using a spatula, then use your hands to combine until a firm, cookie-dough consistency forms. Add more almond flour if the mixture feels too wet.
  4. Shape and Chill: Line a bread loaf pan or meal prep container (approx. 6 x 4 inches) with wax paper. Press the dough firmly into the container to compact evenly. Refrigerate for at least 2 hours.
  5. Prepare Optional Glaze: Whisk together confectioners sugar and coffee creamer until a smooth glaze forms. Spread evenly over chilled dough.
  6. Set the Glaze: Freeze the glazed bites for about 20 minutes to allow the glaze to set properly.
  7. Slice and Serve: Remove from the container, slice into bite-sized pieces, and enjoy. Store leftovers in an airtight container in the fridge up to 5 days or freeze up to 1 month.
