  • 8 flour tortillas (or corn tortillas)
  • Filling:

    • 1 lb ground beef
    • 2 tablespoon taco seasoning
    • ¼ cup water
    • 4 tablespoon enchilada sauce
    • 8 ounce refried beans (½ can)
    • ½ cup shredded cheese (cheddar, mozzarella or Mexican cheese blend)

    Topping:

    • 4 tablespoon enchilada sauce
    • ½ cup shredded cheese (cheddar, mozzarella or Mexican cheese blend)

    Garnishes (optional):

    • 1 tomato (roma or beefsteak, seeds removed and diced)
    • 1 small red onion (diced)
    • ¼ cup black olives
    • ¼ cup sour cream
    • 2 green onions (finely diced)

Instructions

  1. Cook the Ground Beef: In a large frying pan or skillet on medium heat, cook the ground beef until browned. Drain excess grease.
  2. Add Seasonings: Stir in taco seasoning, water, and enchilada sauce. Simmer for 1-2 minutes.
  3. Assemble Pizzas: Spread refried beans on a tortilla, top with beef, cheese, and another tortilla. Add sauce and more cheese on top. Repeat for remaining pizzas.
  4. Cooking Methods:
    • Air Fryer: Preheat to 400°F. Air fry pizzas for 5 minutes.
    • Oven Baking: Bake at 350°F for 8-10 minutes.
