McGriddle Bites are bite-sized versions of the classic McGriddle, combining fluffy pancakes, savory sausage, and melted cheese, with a drizzle of maple syrup for the perfect sweet and savory flavor. Great for breakfast or a fun snack.

Ingredients

  • 1 cup pancake mix
  • 1/2 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1/4 teaspoon vanilla extract
  • 1/4 cup maple syrup (plus extra for serving)
  • 8 small breakfast sausage links, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • Butter or oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin with butter or oil.
  2. In a medium-sized bowl, mix together the pancake mix, milk, egg, melted butter, and vanilla extract until smooth. Stir in the maple syrup until combined.
  3. Add a spoonful of the pancake batter into each muffin tin, filling each cup about halfway.
  4. Top the batter with crumbled sausage and shredded cheddar cheese.
  5. Add another spoonful of pancake batter over the sausage and cheese, covering them completely.
  6. Bake the bites in the oven for about 12-15 minutes or until they are golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the McGriddle Bites to cool slightly before removing them from the tin.
  8. Serve warm with extra maple syrup for dipping, if desired.
